Anthony Vitolo grew up in the kitchen of beloved SoHo enclave Emilio's Ballato, learning from his dad how to create its famed authentic Italian dishes. Not a lot has changed at Emilio's but now as owner/executive chef, Vitolo does enjoy adding the occasional twist to those foundational favorites. The fans still go wild. Among those adoring regulars are some very famous faces. And while sharing celeb selfies with his 13K+ Instagram followers is a fun perk, this chef is still happiest behind the burners of the tiny kitchen where it all began over 25 years ago...a boy, his dad and some to-die-for spaghetti cacio e pepe.
